A great treat for lunch boxes, even when you have a morning coffee. My sister-in-law’s sister loves this so much, that she begged for the recipe.
I am just going to have to say it, but I LOVE Nigella Lawson. I love the way how she combines intelligence, sex appeal and motherly devotion, in fact she is the only woman I fancy on this Earth.
What I like about rocky road is that it’s easy to make, anyone can do it, whether you are eight or eighty-eight. Plus it’s very easily adaptable, ginger biscuits is a good adaptation, as is shortbread. (I got the idea of putting in shortbread from a bakery in Devon.)
Also, I would like it noted that the ones in the photo were made ages ago, round about January 2015.
Rocky Road Crunch Bars – adapted from Nigella Express by Nigella Lawson
This is just a good basic Rocky Road recipe. Also makes a great hamper filler.
300g good dark chocolate
125g butter, unsalted
3tbsp golden syrup
200g rich tea biscuits, or even digestives
100g mini marshmallows
Quite simple really. In a pan set over a low heat, melt the chocolate, butter and syrup. Meanwhile crush the biscuits in a large food bag, you’ll want a mix of fine crumbs and large pieces.
In a large bowl, combine the biscuits and marshmallows. Pour the chocolate into the bowl, and mix together well. Place in a foil tray, this makes for easy removal later on. Flatten the mixture out and place in the fridge. Chill for at least two hours before cutting into bars. Serve with coffee.
