Well, this is it, my first Slimming World recipe. A filling pasta salad, based on an idea told to me by my cousin.
The point of Slimming World is that it’s a lifestyle choice, not a diet. You can eat things on this, like pasta,and feel full afterwards. Which is great. And you can have a little treat every day too.
The idea for this pasta salad came via my cousin Claire’s husband, Ian. Ian and Claire have been doing Slimming World, and they’ve done really well at it.
When Mum and I moved into where we’re living now, Ian helped. And during the journeys between the old flat and the bungalow, Ian shared a few ideas for Slimming World meals that he does for himself. This dish was one of them.
I made it last night, and I bloody enjoyed it. So much so that I will be doing it again soon.
Pesto Tuna Pasta Salad -serves 1
In the photo above it does look like a big portion, but it’s bulked out with salad greens, cherry tomatoes and tinned tuna.
This is also easily multiplied.
100g wholemeal penne
1 tbsp green pesto
Cherry tomatoes, halved
Spring onions, sliced
1 x 200g tin tuna in spring water
This is quite simple. Cook the pasta in a pan of boiling water until al dente. Once cooked drain thoroughly, and return to the pan.
Add the rest of the ingredients, and toss together. Serve in a bowl.
